The Love of Purslane

For years my husband has been pulling these dreaded weeds that have plagued our gardens. Then we saw a post circulating on Facebook that it is not only edible but rich in nutrients. I looked a bit deeper and found it is a powerhouse packed with nutrition, including calcium, magnesium, potassium, manganese, copper, iron, phosphorus, selenium, zinc, sodium, more omega-3 fatty acids than any other leafy green which research shows has had amazing value in reversing various diseases and conditions, one of the highest vegetable vitamin A sources, some B's, C and very special antioxidants, and as a succulent it is full of rich hydration. This information hit my news feed 2 days after we tossed out several 5 gallon buckets of it. 

It turns out it grows everywhere. Just about any place on earth that gets some water and is not covered with 3 feet of snow year round find purslane to be relentless. And most people, as we did, snarl at it and toss it, trying to get rid of it.
But it just. Keeps. Coming. Back.

​It reminds me of the amazing love of God. His love is so rich, so satisfying, so life-giving and is widely rejected, disregarded, even snarled at like an unwanted weed. All over the world, He is patiently waiting and holding out His hands to offer is unfailing love to all the hungry people starving spiritually while rejecting the very thing that would save them. And at the same time, He is relentlessly offering a rich source of nourishing food to a world starving physically, declining from disease and some even without food and hungry. 

​Now every time I see purslane growing I interpret that as one way God is saying "I love you." I never want to throw it out again. We have been enjoying it in salads and in our daily green shakes, and saving money in the process! 
 

There are many recipes and information about purslane. There is a plant that looks similar but has a hairy stem and milky sap that comes out, don't mistake that for purslane, it is poisonous. And don't mistake spirituality for the only One able to save, a personal relationship with Jesus Christ.

Another benefit of eating weeds is Monsanto has no commercial interest in messing with it! No GMO. I recommend sufferers of cancer to eat weeds. Dandelion is another fine weed for health.
