Anne's Favorite
I was hosting a cleanse and one of my trainers joined me. I was scheduled to make the Date and Fennel Salad on this day, but I made this instead. It was her favorite. She swore she could eat it everyday for the rest of her life and be satisfied. See if you love it as much as she does and let me know!
Salad:
1 jicama, thinly sliced into bite-sized pieces
1/2 head cabbage, shredded
1 bulb fennel, thinly sliced (I use my food processor, slicing attachment, for the fennel and jicama)
Dressing:
1 orange or tangerine
6 dates
1/2 bunch parsley
1/4 bunch cilantro
1 apple
2 tbsp fresh lemon juice or lime
dash sea salt
Optional: Add 1 jalepeno, 1/4 cup olive oil or coconut oil, 1 tsp coriander, 1 tsp fennel seed
Blend or process dressing ingredients until fairly smooth and mix with salad ingredients.
