3 Cups Salad Greens (spinach, mixed, or even leaf lettuce)
1/2 Cup Chopped Cucumbers
1/2 Avocado, chopped
1/4 Cup Chopped Bell Peppers (I prefer green for this one, but choose to your taste)
2 Tbsp Finely Chopped Red Onion
1/2 Cup Chopped Cashews (I love roasted for this, but use whatever you like, raw, dehydrated and seasoned, etc)
1/4 Cup Vegan Mayo (Veganaise or Just Mayo are great, adjust the amount for your taste.)
House Blend
Coconut Bacon, optional topping
