Tom Ka (8)
Ever have amazing Tom Ka? It is my comfort soup. If I am blue, tired, or achy, I just want Tom Ka. But I really want it without the chicken broth, the acidic/GMO soy sauce, the acidic GMO sweeteners, the fish sauce, and the mushrooms. So, when I order according to my health convictions, I get a flavor-less bowl of watered down soup. Far from satisfying. Here is my alkaline, flavor-full version.
2 Tbsp. Olive Oil
1/4 onion, thinly sliced into ribbons
1 Orange Bell Pepper, slivered
1 Green Zucchini
1 Yellow Crookneck Squash
4 Cloves Garlic, sliced
1 - 16 oz. pack of Organic Sprouted Tofu, cubed
1 can of Organic Coconut milk, chilled and liquid/water poured off
1 Quart Imagine Foods No Chicken Broth
4" Fresh Ginger, rough skin removed, sliced
1 stalk Lemongrass, slivered
Fresh Cilantro for Garnish
House Blend
Red Pepper flakes (1 tsp. or to taste)
Sauté veggies in olive oil briefly. Add the rest of the ingredients and let simmer for a few minutes. Season to taste with House Blend, red pepper, and cilantro. Enjoy!
