Date and Fennel Jicama Salad
I got the idea for this recipe from a cookbook called This is Raw, by JP Alfred by combining 2 of the salads in the book and changing some of the ingredients altogether. I love it!
1 Fennel Bulb, Slivered
1/4 Head Cabbage, slivered
1/2 Bunch Parsley, chopped
6 Dates, slivered
2 Apples, matchstick
2 cups Jicama, slivered
1 Red Bell Pepper. sliced fine
1 English Cucumber, sliced
1/4 Bunch Cilantro, chopped
1 Naval Orange, zested, and peeled, cubed
1 Lime, zest and juice
1 Jalepeno, finely chopped
1/2 Cup Olive Oil
1/2 Cup Orange Juice
1 tsp Coriander
1 tsp ground Fennel Seed
1 tsp Salt
