Som Tum (9) Thai Papaya Salad
This tastes as authentic as anything I've had in the best Thai restaurants. Only it is organic, vegan, and alkalized! If you can find organic green papaya, go for it and certainly replace the carrot, broccoli, and cabbage shredds with it, but it is really hard to find and papaya is on the scary list for genetically modified foods. I have even tried it with ripe papaya and it tastes great, but it is sweeter and the texture is much softer than the authentic version of this Thai salad.
Salad items:
2 carrots, shredded (or more if usins all carrots)
2 broccoli stems shredded
(can also sub in some shredded green cabbage in a pinch)
Dressing - this is where the flavor is.
2 Thai lime leaves
1 clove garlic
1/4 cup onion
1 large basil leaf
1/4 cup mint leaves
1/3 cup cilantro
3 Tbsp braggs liquid aminos
3 Tbsp coconut sugar
dash of habenero pepper
1/4 green bell pepper
1/2 cup lime juice (can substitute lemon if needed)
Blend dressing ingredients until smooth and mix with salad items.
Plate and top with chopped cashews.
Enjoy, this is impressively authentic tasting!
