There are a lot of components to this salad, but believe me when I tell you that it is worth the effort. You can enjoy this completely raw or you can carmelize the onions, flash warm the kale in the same pan and warm the figs for a winter delight. The flavors, textures, aromatics, and colors engage all your senses!
6 cups Purple Kale, chopped
1 Baked Yam, cut into bite-sized pieces
1/2 Red onion, sliced
4 Figs, chopped
Avocado Pesto
Balsamic Glaze (heat 1/4 cup balsamin vinegar until bubbling and add 1/4 cup maple syrup, remove from heat and let cool)
1/2 Cup Chopped Raw Almonds
Arrange creatively on a plate and enjoy!
