Coconut Bacon (9)
This is truly amazing! So easy, and so perfect! My husband and 2 year old can barely wait until it is finished before they are sneaking into the dehydrator to grab some. Okay, me too! As soon as I start dehydrating it, the whole house smells like bacon and my very picky husband, who has actually gagged violently on raw coconut declares that it is identical to pig bacon. Only, soooo much better! :)
Meat of as many young coconuts as you want, I usually make 2 or 3 at a time. Scoop out the meat with a spoon and it automatically comes out in strips.
Marinade in the following for 2 hours or more - I have left it in overnight at times, but if you are in a hurry, 2 hours will do.
2 Tablespoons Liquid Hickory Smoke Flavor (make sure it is pure liquid hickory without any nasty ingredients such as corn syrup!)
2 Tablespoon Grape Seed Oil
1/2 Cup Braggs Liquid Amino Acids
Dehydrate for 5-10 hours, depending on how crispy you want your bacon...and WOW! Raw, alkaline, coconut bacon. :)
